American cuisine!

When I arrived in US I had a limited idea about American food… the image that we have in Europe is often reduced to hamburgers, chips and a glass of coca cola with ice…. sure, the same thing happens fot italian food well known around the world for pizza and pasta!!

But just like italian food is not composed only pizza and pasta, American cooking has a variety of different dishes that I discover step by step!

There is not only junk food in the US but a tasty traditional and creative cuisine, with good and astonishing dishes passed down from generation to generation, a cuisine different from north to south from east to west, which  ingredients and traditions that mixes influences from Europe, South America, Africa…

A must of the American food are the cucumber pickles that you can serve not only with hamburger and hot dog but as side dish with salad and grilled meat.

Easy to prepare

for a jar of around 300gr

200gr of cucumber cut in slices not too thin

50gr of white onion

30 gr of sugar

salt

vinegar

cut the cucumber and onion and cover them with salt and let drain a few hours.

heat the vinegar in a large saucepan with the sugar and a pinch of salt. Stir until all the sugar has dissolved, add cucumbers and onions heat soft lights.
Let cool completely one or two hours and put in jar.
You can keep pickles  for several weeks in the refrigerator

on the American coasts the influence of the sea is undeniable, there are, on both the east cost and the west coast, dishes with crab, lobster, shellfish, especially clams and traditional recipes were developed with the arrival of Europeans by mixing their traditions with ancestral traditions to give life to tasty recipes, that we are able to enjoy today.

first the Clam chowder with some different variants on east and west coast, from north to South ( New england Clams chowder, Manhattan Clam chowder where you add tomatos and chili pepper!, New Jersey Clam chowder…)

in san Fransisco they serve the clam chowder in sourdough bread bowls and the soup is always served with oyster crackers.

For 6 persons

1kg of clams

500 gr of potatos

2 carrots

a piece of celery

1 slice bacon, 1 chopped onion, parsley, thyme, liquid cream
Put 20cl of water into a saucepan, add shells, coverings and bring to a boil. The shells will open, keeping only open shells.
Reserve some shells with the shell and clean others. Coarsely chop the flesh and filter the cooking water.
In a saucepan put bacon ,onion, celery , cover and cook 5 minutes.
Add 75 ounces of cold water, potatoes and thyme. Wait until the potatoes are cooked. Add clams and water and continue to cook for 20 minutes, add salt peper cream and serve hot with parsley

if you want to trasform in Manhattan clam chowder you add 15 cl of tomato sauce and chili powder!

Of course the american food tradition meat as an important part…

and what is better than pork ribs, a tipical dish of soul food cuisine?

The soul food is prepared by African-americans whose roots date back to the arrival of African slaves in the American territory.
Its cuisine combines the main elements of African cuisine with products from local hunting and fishing

2 kg of porc ribs in rack

1 onion, 2 spoons of brown sugar, 1 spoon of mostard, 10 cl of ketchup, 2 spoons of worchester sauce, 1 spoon of beer, 1 lemon juice, 6 cl of white vinegar, 12 cl of water

salt, peper, chili

cook ribs in the oven for 40 minutes at 200 °C with the fat part facing upwards.
Meanwhile, in a saucepan heat all the other ingredients
once cooked the ribs remove excess fat from the rib’span and cover with the sauce. Continue cooking in the oven at 180 degrees for 40 minutes, brushing occasionally with the sauce.
the ribs may be accompanied by sweet potatoes cut into cubes and steamed, mashed potatoes or corn also steamed and then brush with butter.

And is there any better way to finish dinner than a yummy cheesecake?

the cheesecake became very famous in New York in the early 900 , in the 1929 the Turf restaurant owner in New York is the inventor of the original cheese cake made only with cream cheese (the famous Philadelphia produced by Kraft that had begun to be produced at the end of 800)
The traditional cake is made ​​with the cheese cream and cookies Graham crackers ground into a powder to which you add butter and sugar.
If you can’t find these cookies you can use speculos .
for 6 /8 people
150 gr of biscuits
800gr of cheese philadelphia
140gr of sugar
40 gr of brown sugar
3 eggs
2 tablespoons potato starch
1 tablespoon vanilla extract
100 gr of cream
60 gr of butter
zest of one lemon

grind the biscuits into powder and mix with butter and brown sugar
put the mixture on the bottom of a mold
beat the cheese and add one egg at a time with sugar and gradually all the ingredients
Poor in the cake mold and bake for 45 minutes at  150°C
Good accompanied by a strawberry coulis!
